Today I have a very easy, basic recipe for you guys: this forest fruit breakfast crumble. Although I like flavouring my food with a lot of herbs and spices (like cardamom, nutmeg, anise, ginger…), it can also be just as delicious to keep things simple. They do say less is more, right?

So, about the recipe. This recipe features an easy and fuss-free breakfast crumble, filled with oats, almonds, forest fruit and apple. You only need to throw (ok, not literally..) the ingredients together in a baking dish, put it in the oven, and wait for it to bake. The fruit filling will get all juicy, while the topping will get a little crunchy! I promise you, baking this crumble will fill your kitchen with a delicious aroma, making your tummy rumble!

(serves 4)

Berry Filling:
• 500 grams / 4 cups of mixed berries (fresh or thawed frozen)
• 1 apple, cut into small pieces
• ½  teaspoon vanilla
• 3 teaspoons of fresh lemon juice
• 2 tablespoons of maple syrup or local honey

Crumble Topping:
• 240 grams / 2 ½ cups of rolled oats
• 5 tablespoons of almond meal/almond meal (place almonds in a blender or food processor until you reach a flour consistency)
• 1 tablespoon of flaked almonds, or coarsely chopped almonds
• ½ teaspoon vanilla
• 6 tablespoons of maple syrup or honey
• 5 tablespoons of coconut oil, melted
• Pinch of sea salt

Can be enjoyed with:
• A dollop of (coconut/soy) yoghurt
• Fresh fruit (more berries etc.)
• A sprinkle of maple syrup or local honey
• Or just by itself


Preheat the oven to 175°C / 350°F.

In a bowl, mix all the berry filling ingredients until combined. Place in a baking dish.

In a different bowl, mix the crumble topping ingredients. Start with the oats, almond flour + almonds, vanilla and salt. Then add the maple syrup and coconut oil. Mix until combined.

Pour the crumble topping on the berry filling, and distribute evenly.

Bake in the oven for about 35-40 minutes, until the berry filling is bubbling and the topping has become golden brown.
